Makes about 1 cup
Ingredients
• ½ cup almonds
• ½ cup hazelnuts (or pecans if preferred)
• ¼ cup sesame seeds
• 2 tablespoons coriander seeds
• 1 tablespoon cumin seeds
• 1 tablespoon fennel seeds
• 1 teaspoon salt
• 1 teaspoon freshly ground black pepper
Method
- Toast almonds and hazelnuts in a dry pan over medium heat for 5–7 minutes until fragrant. Cool slightly.
- Toast sesame seeds separately until lightly golden.
- Toast coriander, cumin, and fennel seeds for 1–2 minutes until aromatic.
- Pulse nuts in a food processor until coarse (not powdery).
- Add remaining ingredients and pulse briefly to combine.
