Dukkah (Egyptian / Middle Eastern)

Makes about 1 cup
Ingredients
• ½ cup almonds
• ½ cup hazelnuts (or pecans if preferred)
• ¼ cup sesame seeds
• 2 tablespoons coriander seeds
• 1 tablespoon cumin seeds
• 1 tablespoon fennel seeds
• 1 teaspoon salt
• 1 teaspoon freshly ground black pepper
Method

  1. Toast almonds and hazelnuts in a dry pan over medium heat for 5–7 minutes until fragrant. Cool slightly.
  2. Toast sesame seeds separately until lightly golden.
  3. Toast coriander, cumin, and fennel seeds for 1–2 minutes until aromatic.
  4. Pulse nuts in a food processor until coarse (not powdery).
  5. Add remaining ingredients and pulse briefly to combine.
