Step-by-Step Method

1. Marinate the Meat

Chicken or lamb

Yogurt

Ginger & garlic

Turmeric

Masala

Cinnamon stick, cardamom, cloves

Salt

➡️ Marinate for at least 2–4 hours (overnight best)

2. Cook the Meat Base

Fry onions until golden

Add marinated meat

Cook until tender

Add potatoes (traditional touch!)

3. Prepare the Rice

Parboil basmati rice

Add whole spices + salt

4. Layering (The Heart of Cape Malay Style)

Layer rice → meat → rice

Sprinkle:

Saffron water or turmeric water

Fried onions

Fresh coriander & mint

5. Steam (Dum)

Cover tightly

Cook on low heat 30–40 mins

6. Finish

Gently fluff

Do NOT mix too much (keep layers intact)

2. Cook the Masala Base

Fry onions until dark golden

Add tomatoes

Add marinated meat

Cook until thick and rich

3. Add Potatoes

Fry separately

Add into masala

4. Rice Preparation

Parboil rice with:

Whole spices

Salt

5. Layering (Durban Style)

Rice → meat → rice

Add:

Saffron/turmeric water

Ghee

Fresh herbs

6. Steam (Dum)

Seal pot tightly

Cook low heat 45 minutes

7. The Durban Finish

Slightly mix (not fully)
