Date & Almond Energy Bites
A naturally sweet treat inspired by the Sunnah foods of dates and nuts — perfect for Ramadan or a quick nourishing snack.
Ingredients
- 1 cup soft Medjool dates, pitted
- ½ cup almonds, finely chopped or ground
- 1 tbsp honey
- 1 tbsp coconut oil
- ½ tsp cinnamon
- Pinch sea salt
- Desiccated coconut or crushed pistachios (for coating)
Method
- Blend dates and almonds in a food processor until sticky and well combined.
- Add honey, coconut oil, cinnamon and salt; pulse again until the mixture forms a soft dough.
- Roll into small bite-sized balls and coat lightly in coconut or pistachios.
- Chill for 20 minutes before serving.
