Date & Almond Energy Bites

A naturally sweet treat inspired by the Sunnah foods of dates and nuts — perfect for Ramadan or a quick nourishing snack.

Ingredients

  • 1 cup soft Medjool dates, pitted
  • ½ cup almonds, finely chopped or ground
  • 1 tbsp honey
  • 1 tbsp coconut oil
  • ½ tsp cinnamon
  • Pinch sea salt
  • Desiccated coconut or crushed pistachios (for coating)

Method

  • Blend dates and almonds in a food processor until sticky and well combined.
  • Add honey, coconut oil, cinnamon and salt; pulse again until the mixture forms a soft dough.
  • Roll into small bite-sized balls and coat lightly in coconut or pistachios.
  • Chill for 20 minutes before serving.
