Garam Masala
Fragrant Spice Blend

Ingredients:

  • 2 tsp Cumin Seeds
  • 1 tsp Coriander Seeds
  • 1/2 tsp Black Peppercorns
  • 1/2 tsp Cloves
  • 1/2 tsp Cardamom Pods
  • 1/2 tsp Fennel Seeds
  • 1 Small Cinnamon Stick
  • 1/4 tsp Nutmeg (grated)
  • 1/4 tsp Ground Mace

Method:

  1. Toast spices in a dry pan until fragrant.
  2. Let cool, then grind to a fine powder.
  3. Store in an airtight container.
  4. Use in curries, stews, & more!

Garam Masala
History & Origin:
Garam Masala originates from Northern India and translates to “warming spices.” It typically
includes cumin, coriander, cardamom, cloves, cinnamon, and nutmeg. The blend is added towards
the end of cooking to preserve its aroma.

Signature Dish: Creamy Butter Chicken (Halal)

Ingredients:
* 500g halal chicken breast, cubed
* 1 onion, finely chopped
* 2 cloves garlic, minced
* 1 cup tomato puree
* 1/2 cup fresh cream
* 1 tbsp Garam Masala
* 1 tsp paprika
* 2 tbsp butter
* Salt to taste

Method:
1 Sauté onion and garlic in butter until soft.
2 Add chicken and cook until sealed.
3 Add tomato puree and spices; simmer 15 minutes.
4 Stir in cream and cook until thickened.
5 Serve with basmati rice or naan.
